A COLOME & ALACRUZ Wine dining Experience on April 3rd 2025 

Colome Wines: In a magical corner of the Calchaquí Valleys in Salta, they found a place where the extreme climate and many years of experience made it possible to create the world’s most recognized high-altitude wines. Grapes are grown in four vineyards at four different altitudes from 1,750 to 3,111 meters (5,740 to 10,200 feet) above sea level.

1ST. HIGHLAND FRESH

QUINOA TARTARE, CUCUMBER, CHERRY TOMATOES, AVOCADO CREAM, CITRIC GREEK YOGURT.
Wine Pairing White Wine Torrontes offers the floral notes of roses, the citrus aroma of grapefruit and a spicy hint. In the mouth it is fresh, round and well-bodied with a long, elegant finish.

2ND. CREPE OF THE HEIGHTS

REED BEET CREPPE, ANDEAN HUMITA, PECCORINO GRATEN.
Wine Pairing 100% Malbec Autentico Altitud: 2300m (7600ft). Ageing: 10 months in tank and concrete eggs, 10 months in bottle.
This wine is intense in color and full of aromas like red cherries and blackberries, a well integrate herbal touch with elegant spice and mineral notes. The mouth is crisp and silky with ripe and round tannins.

3RD. STRIP OF THE ANDES

GRILLED NY STRIP W/CREAMY POTATO MILLE-FEUILLE, MALBEC & RED FRUITS REDUCTION.
Wine Pairing 100% Malbec Altura Maxima: Altitud: 3111m (10200ft). Ageing: 24 months in 3° & 4° use french oak barrels.
The true expression of terroir in this Malbec comes from the extreme altitude at which the vineyard sits, it receives much more sun, much less UV protection, producing thicker skinned grapes that deliver a more robust mouthfeel supported by fresh acidity.

4TH. PEARLS OF TORRONTES

TORRONTÉS POACHED PEARS WITH CHAMPAGNE SABAYON AND TOASTED ALMONDS.
Wine Pairing Norton 101 Bubbles Amalaya Brut Nature: Delicate and sophisticated. This a harmonious blend of two emblematic varieties, the Calchaquí Valley, Salta. Riesling-Torrontés is the perfect blend for this sparkling wine of great aromatic persistence with fruity notes. Riesling 80% – Torrontés 20%.
